Looking for a fun treat to make with your kiddos? Apple cinnamon snack cakes are a healthy way to enjoy Fall flavors at home! We have plenty of delicious apples at the Farm Stand this week, so stop by and let us know if you use the recipe below 🍎 😋

Ingredients

1 large apple, diced very small
1 Tbsp coconut sugar or brown sugar
1 1/2 tsp cinnamon, divided
1 cup unsweetened applesauce
1 large egg
6 Tbsp avocado or vegetable oil
1/4 cup honey or maple syrup
1/2 cup milk (any kind)
2 tsp vanilla extract
1 1/2 cups "quick" (instant) oats not regular rolled oats, see note above for sub
1 cup whole wheat flour all-purpose or gluten-free blend
1 1/2 tsp baking powder
1/4 tsp salt

Instructions

Preheat oven to 350 degree. Grease a 9-inch square cake pan then line partially with parchment paper (This just makes it easier to remove from the pan but you can skip that step if you’d prefer.)

Add diced apple, coconut sugar, and a 1/4 tsp of cinnamon to a bowl then mix to combine. Set aside.

In a large bowl, whisk together applesauce, egg, oil, honey or maple syrup, milk, and vanilla. Using a spoon or rubber spatual, stir in the remaining 1 1/4 tsp cinnamon and the rest of the dry ingredients. Mix until just combined then stir in the diced apple mixture.

Spread cake batter evenly in your prepared pan and sprinkle on a pinch of extra oats, if you'd like. Bake until golden brown around the edges and a toothpick inserted into the center of the pan comes out clean, 25 to 30 minutes.

Cool completely then cut into 12 squares. Store in an airtight container on the counter for 2 days or in the fridge for 5 days. You can also freeze the cake, tightly wrapped, for a month or two.

Swing by the U-Pick stand at the Farmer’s Market for buy one get one free papayas this weekend! Thanks to Hurricane Milton we have a lot of yummy papayas that need a good home, and here is a delicious recipe to try at home! 😋

Roasted Papaya with Brown Sugar

Ingredients

2 tablespoons light-brown sugar
¼ teaspoon ground ginger
2 medium papayas, halved lengthwise and seeded
¼ teaspoon cayenne pepper
1 lime, cut into 4 wedges

Preheat oven to 450°F. Stir together sugar and ginger in a small bowl.

Arrange papaya halves, cut sides up, in a 10-by-13-inch baking dish. Sprinkle sugar mixture evenly over halves.

Bake the papaya, brushing the edges with melted sugar mixture (it will collect in well of fruit) 2 or 3 times, until mixture is bubbling and papaya edges are beginning to darken, 35 to 40 minutes.

Sprinkle each serving with a pinch of cayenne. Serve with lime wedges.

Roasted papaya can be refrigerated in an airtight container for up to 5 days.
